In mysql you can make some data apear to be garbled or hiddne, I'm wondering if this can be done using psql?

you could "hide" or mask columns through views...

Unlike MySQL there is no hidden type for your data, but you can use the
pg_user example,
see below :

%> psql template1

template1=> select * from pg_user;
postgres|      26|t          |t       |t       |t        |********|Sat
Jan 31 07:00:00 2037 CET

The password file is "hidden", but how ?
just type :

template1=> \d pg_user
View    = pg_user
Query   = SELECT "pg_shadow"."usename", "pg_shadow"."usesysid",
