Just include them in the SELECT:
SELECT
lag(current_meter_reading) OVER(ORDER BY current_reading_date) AS
kWh_prev,
current_meter_reading - lag(current_meter_reading) OVER(ORDER BY
current_reading_date) AS kWh_diff,
(...etc...)
