Jed,

There may be a more elegant way to do it but this is the first thing that lept
to my mind.

SELECT '01/01/0001'::date,
       now()::time,
       (    '01/01/0001'::date::varchar
         || ' '
         || now()::time::varchar
       )::timestamp;
