The "PostgreSQL Cookbook" I maintain (which is due for an overhaul) has
some 30+ examples:

One book I saw that was good with PL/pgSQL was "Beginning Databases with
PostgreSQL" by Wrox Press. I was one of the technical reviewers of the book
(along with Peter Eisentraut) and I quite like the book.
