I think you'd need something like
INSERT INTO endTable SELECT (convertStartToEnd(st.*)).* FROM startTable
st;
to make it break up the type into its components.
INSERT INTO endTable SELECT * FROM (SELECT convertStartToEnd(st.*) FROM startTable)
that should work too
