Revert behaviour of -x/--xlog to 9.1 semantics

To replace it, add -X/--xlog-method that allows the specification
of fetch or stream.

Do this to avoid unnecessary backwards-incompatiblity. Spotted and
suggested by Peter Eisentraut.
