rfb=> \h set
Command: set
Description: set run-time environment
Syntax:
        SET DATESTYLE TO 'ISO'|'SQL'|'Postgres'|'European'|'US'|'NonEuropean'

it looks like

set datestyle to 'ISO'

to me..

PS you could also set the environment variable PGDATESTYLE to ISO...
