Look in configure.in:

AC_INIT([PostgreSQL], [7.5devel], [pgsql-bugs@postgresql.org])

Or one of the various places that is generated from that, such as the
PG_VERSION or PG_VERSION_STR #defines in src/include/pg_config.h
