Maybe like this:

create or replace function
  fconcat_name(varchar, varchar, varchar) returns varchar as '
      select replace($1 || '' '' || $2 || '' '' || $3, ''  '', '' '')
' language sql;

regression=# select fconcat_name('John','','Doe');
  fconcat_name
--------------
  John Doe
(1 row)
