SELECT * FROM foo ;
 key | data1 | data2
-----+-------+-------
   1 | zzz   |
(1 row)

SELECT key || '|' || data1 || '|' || data2 FROM foo;
 ?column?
----------

(1 row)

If data1 or data2 are NULL the request is NULL
